A few months ago, looking for an easy dinner, I came across this recipe for Lentil and Brown Rice Casserole from $5 Dollar Dinners blog. It was great! It’s such an easy, frugal meal and quick to put together and throw in the oven. So I started thinking of ways to change it up a bit.
Looking around the kitchen for inspiration I came upon a package of dried figs in the cupboard.
The dried figs reminded me of this fabulous recipe I saw one day on Steven and Chris, so I decided that I remake this healthy casserole with a Moroccan twist! I found some dried apricots, chopped those up with the figs and added some Moroccan inspired spices et voila!
Moroccan Inspired Lentil and Brown Rice Casserole
3/4 cup Lentils
1/2 Cup Brown Rice
3 Cups of liquid ( I used 2 cups of homemade chicken stock and 1 cup of water)
2 tsp Cumin
1-2 tsp Cinnamon
2 Bay Leaves
1/4 tsp of Salt
1/4-1/2 Cup of dried figs, chopped
1/4-1/2 Cup of dried apricots, chopped
Throw it all in a casserole dish with lid and pop in the oven for 90 minutes at 300 F.
I think it turned out great, but you can add more or less of anything according to your family’s tastes. Next time I’ll make this a vegetarian meal by using vegetable stock instead of chicken stock.
